What's for dinner?

I hate to admit it, but I am a little tired of the recipes in "From Kim's Kitchen to Yours." It's long past time to start working on the second edition, and I'm dying for something new. Never mind that I need to make dinner tonight, and I'll pass on Weevil Tortillas, but please post some of your favorites so I can try out some new stuff. I am particularly interested in Mexican food, so if Trevor can pull himself away from the women for a minute, I would appreciate some good recipe ideas. Also, TexMex is fine, so I expect full participation from the Texan, and soon to be Texan, contingent. Thanks.

I don't have it right this minute but I can make some sweet tasting (more salty than sweet) Breakfast Tacos. They are pretty simple but they do take some skill yet little preparation. Samantha and Mike had them while they were down here and i think they enjoyed them.

Sorry Kim. My mission must have been a failure because I never asked any of the mamitas that gave us food for their recipes. (Secretly I always made fun of those missionaries that did that). The only thing I can tell you for making your mexican food taste better is, when eating the habanero whole, have handy a bowl full of ice and lemon halves dipped into sugar. It helps.
